Gluten-Free Bread-In-A-Cup

This recipe is from my dear friend Bergy over at Recipezazz. She posts "This takes minutes to make and is very very good. Great texture. This recipe is from my hairdressers Larry & Gerry  -they swear by it. They say to use half ground flax and half ground almond. Microwaves differ the wee loaf will have risen to double it's size when ready"
Well I agree, this is very very good. The original recipe did not call for gluten-free all-purpose flour, it called for 1/4 cup ground flaxseed or almond meal. I cook this in a large cup (4 inches across) and it turns out like an English muffin. You could also use this as a hamburger bun. This has a base egg flavour to it but a bread consistency.


INGREDIENTS
1 egg
1 teaspoon olive oil
2 tablespoons gluten-free all-purpose flour
2 tablespoons ground flaxseed or ground almond meal
1/2 teaspoon baking powder

DIRECTIONS
Whisk together the egg and oil and set aside.
Mix the flour with the ground flaxseed/ground almond meal and the baking powder.
Add the egg and oil mixture and whisk together.
Lightly coat a large cup with non-stick spray and pour the batter in the cup.
Microwave the batter for 1 1/2 to 2 minutes.
Remove from cup and allow cooling.
Enjoy!
