Cocoa Oatmeal Coconut Clusters -Allergen Free

These clusters are a delicious treat. They are perfect for get-togethers/potlucks or kid’s birthday parties because they are free of the common allergens. The type of cocoa powder you use will make a big difference in the flavour of these so make sure you are using a good quality one.



INGREDIENTS
2 cups coconut palm sugar
1/3 cup unsweetened cocoa powder
1/3 cup coconut oil
1/2 cup canned lite coconut milk (shake can well)
1/2 teaspoon pure vanilla extract (not the fake stuff)
3 cups gluten free old fashioned rolled oats
1 cup coconut flakes

DIRECTIONS
Stir together the coconut palm sugar, cocoa powder, coconut oil and coconut milk in a large pot and cook, while stirring, over medium heat until the mixture starts to bubble; remove from heat and stir in pure vanilla extract.
Stir in the oats and coconut making sure everything is coated with the cocoa/sugar mixture.
Drop by spoonful on top of a wax paper lined baking sheet; place in refrigerator to harden.
